Spring Road Trip Meal Plan

I’m so excited for our first camping road trip that I don’t even care about the rain that’s been forecasted. They’re always wrong anyway, right? We will be heading up the Oregon Coast, starting just south of Newport, and ending with a stay at the haunted Hotel Sorrento in Seattle, all over six days. While on the road, we’ll be scoping out communities where we might want to live after I graduate in June. Because of this, we’ll be spending a lot of our time in the small coastal towns, and will probably eat at least one meal a day in a restaurant, meaning fewer meals to plan for. The breakfasts and lunches are pretty basic; and for the dinners, I think that while we’re on the coast fresh fish or seafood with a little butter and lemon will be great with some of the items I’m already bringing. While we’re up in Washington, I’m planning an easy gnocchi skillet with chicken sausage and tomatoes. Wine, dark chocolate, and cookie s’mores (weather permitting) will be a nice treat at the end of the day.

Pita bread sandwiches with meat, cheese, and avocado


Fresh caught pan-grilled fish (or seafood) with fried potatoes and veggies or pita bread, hummus, and raw veggies

Gnocchi, cherry tomatoes, and Italian sliced sausage (pre-cooked chicken)
